Midsummer pleases housewives with a huge variety of fruits and berries. I am looking forward to the peach season. Delicate and juicy, they are delicious in compotes, pies, in the form of jam. Our family absolutely adores the peach puff pastry roll, which I cook as soon as the peach season begins. I am pleased to share with you the recipe that my grandmother taught me. There is nothing particularly complicated about it, especially since you can buy the dough at the nearest supermarket, and not make it yourself, as my grandmother did. However, the secret of the roll is that the fruit must be caramelized before being put into it, then the taste of the peach is revealed as much as possible. Well, let's not delay the beginning any longer and let's get started!

Ingredients:

  • Peaches - 3-4 pcs.
  • Puff pastry - 500 g
  • Sugar - 150 g
  • Butter - 150 g
  • Egg yolk for brushing - 1 pc.
  • Cinnamon - 1 tsp

Since the dough is already ready, let's start filling. Wash the peaches, remove the seeds, remove the skin and cut into small wedges.

Combine butter and sugar in a frying pan, heat over low heat, let the butter melt. Stir so that the sugar dissolves in the butter, add the cinnamon. The result is a fragrant caramel.

Place the peaches in the pan and mix well. Each slice should be covered with caramel on all sides. Peaches will give some of their juice, soften slightly, and their color will become more saturated. The fire can now be turned off. Do not leave peaches on fire for very long. They should not be cooked or very soft.

Roll out a sheet of puff pastry, previously thawed, into a rectangle. We divide it into two equal parts. We leave one large, and cut the other into two. We put the larger part on a baking sheet - this will be the base of the pie. Remember to cover the baking sheet with baking paper and lightly grease with butter. If you have a silicone baking mat, you can use it. Distribute half of the caramelized peaches evenly over the dough.

Cover the peaches with one of the remaining parts of the dough and put the remaining fruits on it.

Cover the peaches with the last sheet of dough and seal the edges. Pierce the dough with a fork so that steam can escape during baking and the top of the dessert does not rise too much.
