In this recipe, you will learn how to make delicious meat filling and knead puff pastry yourself.
At home, puff pastry is quite difficult to make. The cooking process is laborious and requires certain skills and knowledge. Therefore, even experienced housewives are too lazy to cook it and purchase frozen dough in stores to save time. But there is a recipe for instant puff pastry. We will talk about him today. Ingredients:
- Flour - 300 g
- Vegetable oil - for frying
- Eggs - 1 pc.
- Butter - 200 g
- Drinking water - 75 ml
- Table vinegar - 1 tsp
- Salt - a pinch in the dough, 0.5 tsp in the filling
- Meat - 500 g
- Carrots - 1 pc.
- Garlic - 2 cloves
- Tomato paste - 1 tablespoon
- Ground black pepper - a pinch
Making a roll with homemade puff pastry meat:
1. First of all, prepare the dough products. These include flour, salt, vinegar, frozen butter, chilled eggs, and drinking water.
2. Beat an egg into a bowl, add a pinch of salt, vinegar and ice cold drinking water. Stir with a fork or whisk to make a homogeneous mass and send it to the refrigerator.
3. In the meantime, do your test. Pour flour on the countertop, take butter from the freezer and grate it on a medium grater, periodically dipping it into flour.
4. Mix the flour mass with your hands, it should be loose and form a slide. Make a small indentation in the middle, into which pour in the egg liquid.
5. Start kneading the dough. But do this not in the usual way, but scoop up the dough from the edges and put it in the middle, i.e. you do not knead, but rake and lay. This is how you layer the layers. Do not stir it in any way, otherwise you will tear the layers. Gather the dough into one square or rectangular lump, wrap it with plastic foil and refrigerate for 12 hours. But if time is limited, then soak it in the cold for at least an hour. If you prepare a large amount of dough, then cut it into portions, wrap it in a bag and send it to the freezer for storage. And when you decide to bake something, defrost it at room temperature, and if the temperature is too high, then the dough will blur and it will be difficult to work with it. Then defrost it in the refrigerator.
6. In the meantime, prepare the meat filling. To do this, prepare any kind of meat, carrots, garlic, tomato paste, salt, pepper and any spices. You can diversify the taste of meat filling with other products such as: carrots, tomatoes, onions, mushrooms, herbs, eggs, cream, cheese and spices.
7. Place a medium or large wire grinder and twist the meat into the carrots. Add garlic passed through a press to the products.
8. Place the frying pan on the stove, add vegetable oil and heat. Send minced meat into it. Set the heat to high and fry for 5 minutes until the meat is golden brown. Then add tomato paste, salt, pepper and any spices and herbs to the pan.
9. Stir, cover and simmer the filling over low heat for about 7-10 minutes.
10. Next, form a roll. From the amount of dough that you cooked, you get two rolls with meat. Therefore, divide it in half and roll each into a thin rectangular 3-4 mm layer. Distribute the filling evenly and turn the dough 1, 5-2 cm on three sides, as shown in the photo.
11. Then gently roll the dough into a roll and transfer to a baking tray, seam side down. Brush the roll with an egg for a golden sheen. Preheat the oven to 200 degrees and bake the roll for no more than half an hour. If the temperature in the oven is above 230 degrees, then the cake will harden, below 200 degrees - it will be dry.
12. Cool the finished roll so that it does not break and you can serve it to the table by cutting it into portions and placing it on a serving dish.
