The base without butter and eggs turns out to be fluffy and crumbly, and in combination with a juicy and sour cherry it creates an unusually harmonious taste. You can cook lean pastries according to any recipe that you like best. The main thing from the list of ingredients is to remove eggs, replace butter with vegetable oil, and dairy products are successfully replaced with fruit juice, water or sweet soda. If you need to better hold the food together, then the absence of eggs can be compensated for by bananas, they perfectly “glue” the ingredients and give the delicacy a flavor. Another good way to add stickiness to the dough is to add a few tablespoons of flaxseed flour.
For this recipe, cherries are important to use pitted, and if they are very watery, then they must first be breaded with starch, this will help to avoid soaking the cake. This recipe uses frozen cherries. Baking with it is prepared in the same way as with fresh berries. Only then should the cherries be defrosted and dried from the juice. Although instead of cherries, you can take any other filler, for example, poppy filling, dried fruits or other berries, nuts and fruits. Ingredients:
- Wheat flour - 300 g
- Cherry juice - 50 ml
- Sugar - 100 g or to taste
- Baking soda - 0.5 tsp
- Cocoa powder - 1 tablespoon
- Tomato pickle - 50 ml
- Refined vegetable oil - 70 ml
- Salt - a pinch
Step by step cooking lean cookies with cherries, recipe with photo:
1. Pour all the liquids (tomato pickle, cherry juice, refined vegetable oil) into a deep container for kneading the dough and mix well.
2. Pour flour with cocoa powder into the liquid base, which must first be sieved through a fine sieve so that the flour is enriched with oxygen. Then the products will be more crumbly and crunchy. Also add a pinch of salt, baking soda, and sugar to the dough.
3. Stir the dough well until elastic. It should lag behind the walls of the dishes and hands.
4. By this time, defrost the cherries and drain off the excess juice. If the berries are fresh, wash them, dry them and remove the pits. Add them to the dough.
5. Knead the dough so that the cherries are evenly distributed throughout the mixture.
6. Spread baking parchment on the counter and roll out the dough in a thin layer no more than 5 mm thick.
7. Cut out the cookies on the dough with special cutters. If there are no such forms, then use a glass or any other convenient form.
8. Transfer the cut-out parchment to the baking sheet.
9. Remove the dough pieces, roll them back into a thin layer and cut out the cookies.
10. Send lean cookies with cherries to the oven heated to 180 degrees for 20 minutes. But the cooking time may be different. If you want a crisper cookie, bake it for 25 minutes, prefer a softer one for 15 minutes.
