In this article I will tell you a recipe for lean oatmeal cookies with semolina, honey and dried fruits. It will certainly come in handy for everyone who is fasting. Many people think that lean recipes are few and far between. However, dozens, if not hundreds, of their cooking options have been invented. Spices, nuts, dried fruits, honey, various flour mixtures, etc. are added to the dough. Therefore, lean oatmeal cookies can be delicious and varied.
Today I decided to combine oatmeal with semolina, which gave the product porosity and airiness. I also put honey and dried fruits, which enriched the taste and aroma of the baked goods. But if you wish, you can add other products that you like best to the dough. Such cookies with a cup of tea or coffee will perfectly replace the morning plate of porridge. In addition, by kneading this dough, you can bake cookies in several ways. For example, thin crispy and crumbly cookies or tall and soft gingerbread. It depends on the choice of the chef.

- Oat flakes - 200 g
- Semolina - 50 g
- Vegetable oil - 75 ml
- Honey - 2 tablespoons
- Baking soda - 1 tsp
- Dried fruits - 100 g
- Salt - a pinch
Step by step preparation of lean oatmeal cookies with semolina honey and dried fruits, recipe with photo:
1. Place the oatmeal in a chopper or coffee grinder.
2. Beat the flakes until flour. If you do not have a grinder or coffee grinder, pass the beans several times through a meat grinder.
3. Pour the oatmeal into a bowl, add semolina, a pinch of salt and baking soda. Stir dry ingredients.
4. Pour in vegetable oil.
5. Place honey next.
6. Stir the contents. The mass will be quite thick, but do not let this scare you, then we will dilute it.
7. Steam dried fruits with boiling water and soak for 5-7 minutes.
8. Remove them from the liquid and dry with a paper towel.
9. Cut them into small pieces. Dried fruits can be whatever you like best. For example, raisins, dried apricots, prunes, apples, dates or any others.
10. Transfer the drying agent to the dough and through a fine sieve pour a little liquid (about 50-75 ml) in which they were soaked.
11. Stir the dough to distribute the cakes evenly throughout the volume. Leave the dough to stand for 20 minutes to swell the semolina. Otherwise, if the product is immediately sent to the oven, then in the finished cookies, the groats may crunch on the teeth.
12. Take a small piece of dough with your hands, shape it into a ball and press it down with your palms. Place it on a baking sheet at a short distance from each other, because when baking, the products will increase in volume.
13. Heat the oven to 180 degrees and send the cookies to bake for 15-20 minutes. When the product is covered with a golden crust, it means that it is ready. Remove from the oven, cool and serve. If you wish, you can cover with any glaze.
