Chicken tobacco - flattened, grated with spices and garlic, with a wonderful fried crust, is very much loved and revered by many gourmets. Some consider this dish to be a primordially Russian creation, but in fact it is a Georgian dish. For its preparation, it is better to take a young village chicken, weighing about 500 g. If this is not the case, then broiler chickens will do, however, they will already weigh more, 600-800 g. The taste from homemade chicken, of course, cannot be compared, but the same will be delicious …
In order for the chicken to be fragrant, fried and have a garlic-spicy taste, it must be grated with spices and seasonings. Then it will be much more interesting than just boring fried chicken. The skin of the chicken should remain crispy, so do not pour the liquid sauce over it before serving it, but rather serve it separately at a power outlet. And since this is a Georgian dish, then the sauces should also be Georgian: adjika, garlic, with cilantro, etc.
Also note that the chicken should be fried in a special pan called tapak. But not everyone has it. Therefore, cook the chicken in an ordinary frying pan, and do oppression from the available means: jars or pots of water.

Cooking chicken tobacco in garlic-mayonnaise sauce
1. In a small rosette combine mayonnaise, dried basil and finely chopped garlic. You can also add different herbs and spices to your taste.
2. Sprinkle salt and ground pepper. I also preferred to add ground nutmeg and saffron. But also rosemary, hops-suneli, ground ginger powder, etc. will be appropriate here.
3. Stir the sauce to distribute the spices and herbs throughout the mass.
4. Next, take care of the chicken. Wash the carcass and dry with a paper towel. Lay it on the back and cut it completely across the breast. You must unfold it.
5. Use a hammer to beat it well so that it spreads in an even layer. Hit bones and joints.
6. Spread the sauce well on both sides of the chicken.
7. Cover the baking sheet with parchment and place the chicken. Place the load on top. This could be a pancake weight, a can of water, or something else that you come up with.
8. Heat the oven to 200 ° C and bake the bird for 15 minutes on each side under a press. Serve hot, freshly cooked.
