Harm and contraindications to the use of enoki
These mushrooms are in principle harmless, but there are still some contraindications to enoki. Let's find out who is not recommended to use winter mushrooms:

- Children and pregnant women … Enoki are considered heavy food, so they should be excluded from the diet of these categories of people.
- Patients with gastritis and stomach ulcers … You can eat winter mushrooms, but you should not abuse them. And, of course, you should refrain from consuming enoki during seasonal exacerbations.
Winter mushroom recipes
Enoki mushrooms have a remarkable ability to combine well with any other food. They are often added to barbecue, meat and fish dishes, cutlets, salads, and baked vegetables. And rolls and pies stuffed with winter mushrooms have excellent taste and will become a decoration of the festive table.
In addition, washed enoki can be eaten raw. These mushrooms are eagerly consumed by raw foodists, but doctors still recommend cooking them, albeit not for a long time.
Enoki recipes
- Vegetable salad with enoki and crab sticks … Ingredients: 120 g of green beans, 420 g of enoki, 100 g of crab sticks, fresh cucumber, 1 onion each and 1 bell pepper. Also take ground black pepper and salt to taste, 2 tablespoons of vegetable oil, 1 tablespoon of balsamic vinegar and 5 g of fresh basil. We wash the beans and boil for 5 minutes, then cool them down with cold water. Cutting off the lower part of the honey agarics, boil them for 10 minutes. Grind all the products for the salad, fill them with a mixture of vegetable oil and vinegar. Add pepper and salt, basil leaves. Eat to your health!
- Chinese salad with enoki mushrooms … We need 1 package of winter mushrooms, 1 fresh cucumber, 50 g of glass noodles. For the marinade, take 250 g of water, 2 allspice peas, 1 clove, 1 bay leaf, sugar, salt and vinegar to taste. We will season the salad with soy sauce (3 tablespoons), lemon juice (2 teaspoons), ginger juice (1 teaspoon), odorless vegetable oil (3 tablespoons). We take salt, sugar and pepper to taste. First, we wash the mushrooms, then marinate them for 2 minutes in a prepared marinade from the specified products. We cool the enoki and keep it in the refrigerator for 24 hours. Now we are preparing glass noodles: pour the product with boiling water, leave for 5 minutes, and then drain the liquid. After that, cut the cucumber into thin slices. Add it to the chilled noodles, put the mushrooms there without the marinade. We mix all the components of the dressing and dress our salad. We insist it for 30 minutes and serve it to the table. Fresh cilantro goes well with this oriental dish.
- Mushroom salad golden threads … Ingredients: 180 g of winter mushrooms, 30 g of carrots, 50 g of cucumbers, 4 ml of soy sauce, 10 ml of balsamic vinegar, 5 g of honey, 30 g of fried sesame seeds, salt and herbs to taste. First, we wash the mushrooms, cut off the root system and cook in brackish water for 10 minutes. Pour off the liquid and cool the enoki and put it on a dish. Add cucumbers cut into strips and chopped green onions to the mushrooms. Fry grated carrots and put in salad. Stir all the products and add salt, honey, fried sesame seeds. Prepare the filling from vinegar and sauce and season our dish with an unusual taste.
- Enoki cold appetizer … This dish is very often prepared in China. There is no difficulty in preparing it, and it goes well with fatty foods. For this snack, you can take both fresh winter mushrooms and canned ones. Cut the cucumbers and carrots (if there are other vegetables, they will also work), put them in a dish with enoki and mix everything. The appetizer dressing is made with sesame oil, soy sauce, black rice vinegar, huadziao oil, and Weijing seasoning. The number of products for the dish can be taken to your liking.
- Beef with enoki mushrooms … The first step is to marinate 600 g of beef in 3 tablespoons of apple cider vinegar for 3 hours. Then salt the meat (salt to taste) and simmer in a deep frying pan in vegetable oil (2 tablespoons), covering it with a lid for about 1 hour. At the end of stewing, pepper the beef (pepper to taste) and move it to the side in the same pan. In the same dish, put 0.5 cups of fresh raspberries, crushing it a little, add 2 more tablespoons of vinegar and mix with the meat. Now we wash the mushrooms in an amount of 150 g, cut off their root system so that they disintegrate into separate pieces. Put them in a skillet with meat and raspberry dressing and simmer for another 10 minutes. The dish is ready!
- Light soup with enoki … Ingredients: 1 small daikon, 2 l of fish broth, 120 g of mushrooms, 2 eggs, a bunch of green onions, 210 g of shrimp, salt to taste and 200 g of okra if desired. We rub the daikon on a Korean grater, cut the okra into rings, chop the onion, cut the shrimp into 2 parts. First, cook daikon and okra in broth for 6 minutes. Then we put enoki, shrimps and onions there. Cook these products for another 5 minutes. Salt and pepper. Pour in the beaten eggs. Eat this soup with an unusual taste and unusual ingredients for cooking!
- Enoki soup with chicken broth … We need the following products: 2 potatoes, carrots, onions, 2 liters of chicken broth, 2 tablespoons of vegetable oil, salt to taste and, of course, 100 g of winter mushrooms. We wash and peel the vegetables. Chop the potatoes and onions, and grate the carrots on a coarse grater. First, prepare the fry by frying the onions and carrots in vegetable oil. Then we cook the soup in the broth: cook the potatoes, add the fry and mushrooms without the bottom about 10 minutes before the end of cooking. Salt, put greens to taste.
- Enoki mushrooms in bacon … For this recipe, take 12 mushrooms without a root system. Wrap each enoki in a thin piece of bacon and fry the resulting "hemp" in vegetable oil. We put them on a dish. Cut the lemon into 8 pieces and place on a dish. Decorate with green salad. Sprinkle with lemon juice, and you can eat.
- Noodles with chicken and enoki mushrooms … We take the ingredients for the dish in any proportion. Cut 1 bell pepper into strips. Cut the chicken fillet (2 pieces) into pieces of medium size. Pour 3 tablespoons of vegetable oil into a deep frying pan with thick walls and fry the meat with pepper, adding sesame seeds and salt to taste. You can tear the salad with your hands and also fry it along with the chicken fillet. Separate enoki (150 g) from the base and put in a frying pan, also adding soy sauce. All products that we fry are thoroughly mixed and covered with a lid. Fry the chicken until tender. Boil the noodles separately. We drain the water and put it in a skillet with the rest of the products.
- Fried winter mushrooms … To prepare mushrooms by frying, we need vegetable oil, onion, garlic, 1 bell pepper, salt and garlic to taste. The first step is to rinse the enoki and separate them from the base. Then fry the chopped onions and peppers in vegetable oil. About 10 minutes before the end of frying, add mushrooms to the pan. Salt and put the garlic, passed through the garlic press. You can also add carrots to this dish. Winter mushrooms are perfect for rice.
Interesting facts about Enoki winter mushrooms
In their homeland, in Japan, in the province of Nagano, many years ago, enoki were used for medicinal purposes, in the form of decoctions and infusions. Doctors collected and dried them. After some time, they began to be bred artificially, growing on tree trunks. Nowadays, thanks to modern technology, it is possible to cultivate enoki using plastic bottles for this, and the cultivation process takes place in complete darkness.
In the 60s of the last century, scientists made the discovery that in some provinces of Japan, people suffer from cancer less than in other regions of the country. This was due to the presence of enoki in the daily diet. In different states, these mushrooms are called differently. In China they were named Jingu. Koreans call paengi beoseot, while Vietnamese call Tram Vang or Kim Cham.
In many Asian countries, doctors consider Enoki to be the most beneficial mushrooms for the human body.
