However, despite this, on Shrovetide, when pancakes are a traditional food, few people cook them every day today. Not to mention any new recipes. It is good if at the beginning of the week there is time to bake pancakes according to a reliable and proven recipe. And if the stars converge, then you can allow some not difficult experiment on the weekend.
Today I propose to diversify the Pancake week menu and bake coffee pancakes with semolina and flour. Some will think that I am offering some kind of nonsense. However, the pancakes are incredibly tasty. In addition to the unusual composition, they are easy to "manage". They lay down beautifully in the pan, turn over easily, and turn out to be incredibly soft with a moist structure. In addition, the pancakes have a distinct coffee aroma!

Ingredients:
- Flour - 120 g
- Sugar - 50 g or to taste
- Eggs - 1 pc.
- Instant coffee - 2 tablespoons
- Vegetable oil - 3 tablespoons
- Salt - a pinch
- Semolina - 80 g
- Milk - 400 ml
Step-by-step preparation of coffee pancakes with semolina and flour, recipe with photo:
1. Pour room temperature milk into a deep bowl so that the coffee is well dissolved.
2. Pour instant coffee into the milk.
3. Whisk the milk with the coffee until the granules are completely dissolved.
4. Pour one egg into the liquid mass and stir with a whisk so that it is distributed throughout the mass.
5. Pour semolina into the liquid base.
6. Then add flour, which it is desirable to sift through a fine sieve, so that it is enriched with oxygen, and the pancakes become softer.
7. Add sugar to the food and stir again until smooth.
8. Pour vegetable oil into the food and mix the dough. The oil must be added to the dough so that the pancakes do not stick to the bottom of the pan during frying. Leave the dough to stand for half an hour so that the flour releases the gluten and the pancakes become stronger, and the semolina swells a little, otherwise it will grind on the teeth in the finished patches.
9. Place the pan on the stove and heat well. Brush the bottom with a thin layer of fat before baking the first pancake. It can be anything: bacon, lard, butter or vegetable oil … In the future, you do not need to grease the pan, because butter is added to the dough and the pancakes will not stick to the bottom.
When the pan is well preheated, scoop the dough with a ladle and pour it on the bottom. Swirl the pan to spread the dough evenly over the bottom in a thin layer. Place the skillet over medium heat.
10. Toast coffee pancakes with semolina and flour on both sides over medium heat until golden brown. Frying time will take about 1.5 minutes on one side. Serve ready-made leaflets hot with any toppings: sour cream, hot chocolate, condensed milk, etc.
