Semolina and flour pancakes are a delicious recipe that will satisfy any family member. Semolina is a product that in the USSR was considered a full-fledged substitute for breast milk. In Soviet times, semolina was considered mega-useful and was fed to absolutely everyone. And if the children refused to use it, then the parents, believing in the magical properties of semolina, often tried to push it into them by force. However, a similar attitude in many families to semolina has been preserved to this day. But in this review I want to share a recipe for making not porridge, but pancakes from semolina and flour.
Fritters are a very ancient dish that is easy to prepare. You can make them sweet or salty. This is already to the taste of the cook, depending on what the food will be served with. In addition, if the consistency of the dough is diluted with milk, whey or plain water, then you can make pancakes that will go well with different fillings.
These pancakes are being prepared on kefir and milk. However, if desired, you can use any one liquid. When baking them, you will never have any surprises. Ingredients:
- Milk - 150 ml
- Kefir - 100 ml
- Flour - 100 g
- Semolina - 100 g
- Eggs - 1 pc.
- Vegetable oil - 3 tablespoons
- Sugar - 2 tablespoons or to taste
- Salt - a pinch
Step-by-step preparation of semolina and flour pancakes:
1. Pour flour and semolina into a deep bowl. Add a pinch of salt and sugar. Stir dry ingredients. By the way, you can now pour 1 tbsp. cocoa powder, and you get chocolate pancakes. Alternatively, fry half a serving of white pancakes, then stir in cocoa and continue making chocolate from this dough.
2. Pour milk, kefir into a bowl and beat in an egg. The temperature of the food should be at room temperature, so remove it from the refrigerator in advance.
3. Knead the dough until smooth so that there are no lumps. Do this process with a hand whisk or, better, use an electric blender. He will break all the lumps well.
4. Pour vegetable oil into the dough and stir well to dissolve completely. The consistency of the dough should be like thick sour cream.
5. Place the pan on the stove and heat well. Before baking the first batch of pancakes, you can oil the pan. But then fry the pancakes without repeating this process, because there is already oil in the dough, the pancakes will not stick to the surface. Pour a serving of dough into the pan with a tablespoon. It will spread itself and take a round shape.
6. Fry the pancakes over medium heat until golden brown. They are fried for no more than 1 minute. Then flip them over. Remove the pancakes from the pan after 30-40 seconds.
7. Serve them hot straight from the pan. Serve them deliciously with honey, jam, sour cream, condensed milk or any other delicious sauce.
