I myself would not have believed that someday I would cook something like that, and even praise it! However, if you ever try meatballs in this design, you are unlikely to cook them according to another recipe. They turn out to be so tender, juicy and just melt in your mouth! Or you don't really want to mess around with pre-cooking rice, while you want the meatballs to come out juicy and tender. Then this recipe will definitely suit you! In the dish, cottage cheese is completely invisible, neither in taste, nor in smell, nor in consistency. Nobody will guess about his presence. Ingredients:
- Minced pork - 600 g
- Cottage cheese - 200 g
- Onions - 2 pcs.
- Carrots - 1 pc.
- Tomato paste - 1 tablespoon
- Sour cream - 200 ml
- Ground crackers - 50 g
- Salt - 1 tsp
- Eggs - 1 pc.
- Ground black pepper - a pinch
- Vegetable oil - for frying
- Garlic - 1 clove
Cooking meatballs with cottage cheese in sour cream sauce:
1. If you have minced meat, then use it. But it is better to cook it yourself from a fresh piece of meat. Then you will be sure what it is made of. Then wash the meat and pat dry with a paper towel. Place a meat grinder with a medium wire rack and pass the meat through it.
2. Next, twist the peeled onion with garlic through a meat grinder, which should be washed beforehand.
3. Then pass the cottage cheese through a meat grinder. If it is too watery, then first remove all the liquid from it. To do this, put it in cheesecloth and hang it up. Leave for 1 hour to drain all the serum.
4. Add ground crackers, tomato paste to the minced meat, beat in an egg and season with salt and pepper.
5. Stir the minced meat well. You can do this with your hands, passing it between your fingers. Form into small balls 5 cm in diameter and place in a hot frying pan with vegetable oil. Fry the meatballs on both sides until golden brown. Set the temperature to medium so that they do not burn.
6. Meanwhile, peel the carrots, wash and cut into strips. Put it to fry in a skillet and bring to golden brown. Add a spoonful of tomato paste to it and pour in sour cream.
7. Stir the sauce, season with salt and pepper, heat to a boil and the first bubbles appear.
8. Put all the fried meatballs compactly into the sour cream sauce. Turn on high heat, boil, reduce the flame, cover the pan with a lid and simmer for about half an hour. Serve the finished meatballs with gravy. Boil mashed potatoes or spaghetti for a side dish.
