In today's recipe, I'll show you how to make mashed potato pancakes. This is a delicious and satisfying snack that requires a minimum of time and ingredients. It cannot be called dietary. However, this does not mean that it is not useful. Of course, there are a little more calories than we usually use. After all, the composition of the snack is 95% potatoes. However, in all other respects, these are undeniably positive qualities. If you are tired of boiled or fried potatoes, then these pancakes will come in handy. This exotic vegetable can be used to prepare a delicious dish that will please even the most demanding gourmets.

Ingredients:

  • Potatoes - 5 pcs.
  • Eggs - 1 pc.
  • Wheat flour - 3 tablespoons
  • Bay leaf - 1 pc.
  • Vegetable oil - for frying
  • Salt - 1 tsp or to taste
  • Ground black pepper - a pinch

Step-by-step recipe for potato pancakes:

1. Peel the potatoes, remove the black eyes and cut out spoiled areas, if any. Rinse under running water, cut into pieces and place in a cooking pot. Add bay leaves and season with salt.

2. Fill it with drinking water and place it on the stove. Boil, reduce temperature to minimum, cover and cook for about 15-20 minutes until tender.

3. Check that the pancakes are cooked with a knife or fork. Appliances should easily fit into the vegetable. Then, using a colander, drain the remaining liquid from the pan, and place the boiled tubers in a bowl, where you will further work with the dough. Add a raw egg to the potatoes. I advise you not to pour the potato broth, but cook pancakes or stews on it.

4. Use a crush to grind the potatoes well until smooth and add flour.

5. Stir the puree well with a tablespoon to distribute the flour evenly. Divide the puree into equal pieces and form into oval pancakes, which are lightly breaded in flour.

6. Put the frying pan on the stove, pour in vegetable oil and put pancakes to fry. Heat medium heat and brown until golden brown.

7. Then turn them over and fry on the other side until blush. The frying time on each side should not exceed 3-5 minutes. I recommend using a cast iron pan. It evenly distributes heat over the entire surface, which allows you to fry one portion at a time. Serve the pancakes hot, although they are tasty and chilled. It is very tasty to use them with sour cream, garlic or mushroom sauce.
