Tas kebab is a simple and unpretentious dish, which is a stew (most often lamb) with a lot of tomato and wine gravy. Translated from Turkish, Tas means "bowl" and Kebab means stew / cooked meat. From this came the name. In ancient times tas-kebab was served with bread dipped in gravy. Today, instead of bread, a flatbread is used, which is also dipped in gravy. Often, the meat was accompanied by a side dish of carrots or potatoes, and today tas-kebabs are often cooked at the same time as these vegetables. Although real tas-kebab is only served in its pure form with meat.
In our country, this Turkish dish is prepared with different types of meat, and not just with lamb. For example, tas-kebab with pork turns out to be very juicy, satisfying, tender, with which we will cook it today. Although you can use veal, chicken, turkey and other meats if you want. It takes a long time to prepare the dish, due to stewing, but at the same time it does not require much attention from you.

Ingredients:
- Pork - 1 kg (another type of meat is possible)
- Onions - 1 pc. big size
- Dill - bunch
- Vegetable oil - for frying
- Dry red wine - 50 ml
- Flour - 1 tablespoon
- Tomato sauce - 100 ml (can be replaced with tomatoes)
- Bay leaf - 2 pcs.
- Salt - 1 tsp or to taste
- Allspice peas - 3 pcs.
- Ground black pepper - a pinch
Step by step cooking Tas kebab stew in Turkish, recipe with photo:
1. Wash the meat, dry it with a paper towel, cut off the film with veins and cut into medium-sized pieces.
2. Peel the onions, wash and cut into half rings or sticks.
3. Combine dry wine with flour, salt and black pepper in a deep bowl.
4. Stir the wine well to completely dissolve the flour.
5. Heat vegetable oil in a skillet and add pieces of meat. Turn the heat on above medium and brown the meat, stirring occasionally, so that it is golden brown on all sides.
6. Add chopped onions to the meat pan.
7. Continue frying food until the onions are translucent.
8. Add the tomato sauce to the skillet and stir. If using tomatoes, twist them through a meat grinder or chop them in a food processor.
9. Pour wine into a frying pan, add bay leaves, allspice peas, stir and boil.
10. Reduce the temperature to the lowest setting, cover the pan with a lid and simmer for 1 hour. Serve freshly cooked Tas Kebab cooked Turkish stew.
