Risotto comes from the Italian word risotto, which means "little rice". The dish is rich in white rice starch, which makes the dish very satisfying. Today risotto has won one of their places of honor in the cuisine of many large countries. It appeared in northern Italy, but in a very short time spread throughout Europe. They adore it for its versatility. Since rice is a universal cereal and is very harmoniously combined with many products: meat, poultry, seafood, vegetables, mushrooms. It is prepared quickly, which is also an important advantage. From what the dish has become one of the most popular dishes in restaurant cuisine.
Of the many invented options for preparing risotto, today I want to present the option with shrimps. This is one of the most any types of cooking this dish. To properly prepare this dish, you should first buy the right rice. In Italy, the following varieties are used: Vialone Nano, Carnarole or Arborio. The latter is quite possible to buy in our country. However, you should not expect it to be cheap, many cannot afford it. But still, do not be upset: risotto can be made with other varieties. The main thing is that there is a lot of starch. Round grain rice, for example, is great.

Ingredients:
- Rice - 200 g
- Small frozen shrimps (peeled or in shell) - 300 g
- Dry white wine - 200 ml
- Salt - 1 tsp
- Drinking water - 200 ml
- Sweet pepper - 1 pc.
- Garlic - 2 cloves
- Olive oil - for frying
- Dried or fresh parsley - 1 tsp
- Ground black pepper - a pinch
How to prepare shrimp risotto with white wine step by step:
1. Wash and dry the bell peppers. Remove the inside of the septum with seeds and cut it into medium-sized cubes. Peel the garlic, rinse and chop.
2. Pour olive oil into a skillet and heat.
3. Add the pepper and garlic and lightly fry over medium heat.
4. Rinse the rice a little and place in the pan.
5. Saute rice and vegetables over medium heat for about 5 minutes. This stage cannot be skipped, because without frying, the rice will lose its shape and turn into porridge in the process of further cooking.
6. After that, gradually pour the wine into the pan.
7. Cook risotto stirring occasionally. When all the wine has evaporated, add more.
8. In the middle of a cooking cycle, season the dish with salt and pepper.
9. When all the wine is finished, use drinking water or broth for cooking. Although you can cook a dish with wine, then it will have a specific flavor.
10. Remove the shrimps from the freezer and put them in a frying pan with the rice without defrosting.
11. Season with ground parsley and add a little more water.
12. Prepare risotto by continually adding water or wine. Stir the food. Wait for the liquid to evaporate and add it again. Continue this process until the rice is fully cooked: pour in small doses and wait until it has completely evaporated. Serve the finished risotto hot on its own, although it can be served with a glass of wine.
