Chops are a popular dish in both casual and holiday cuisine. Classic chops are made from carefully chopped meat. It can be used alone or breaded in an egg and flour or breadcrumbs. They are cooked both in the oven and on the stove in a frying pan. They can be with or without filling. In addition, the chops are made from any type of meat. Today I propose an unusual recipe - minced meat chops in a pan. They can be baked in the oven, or they can be fried on the stove. I chose the last option, albeit not the most dietary, but the fastest option for a quick and delicious dinner for the whole family.
Any mince is suitable for the recipe. One condition is that it must be thick enough so that the chops do not fall apart in the pan. They are fried in a pan according to the same principle as a whole piece of meat, while they are much more tender. But if you want to make the chops more dietary, and you have free time, you can bake them in the oven on a baking sheet. Also, the calorie content of the dish can be regulated by the minced meat used. For example, always tender, low-fat, and dietary minced chicken, rabbit or turkey chops. However, the recipe is applicable to any type of meat (pork, chicken, beef), incl. assorted assorted. Minced meat is best used homemade. It is desirable that a little fat is present on the meat. When frying, it will soften the fibers of the meat and the chops will be juicy.

Ingredients:
- Meat (any sort) - 500 g
- Ground black pepper - a pinch
- Garlic - 2 cloves
- Vegetable oil - for frying
- Zucchini - 1 pc. (optional)
- Onions - 1 pc.
- Tomatoes - 2 pcs. (optional)
- Cheese - 100 g
- Salt - 0.5 tsp
- Eggs - 1 pc.
Step by step cooking minced meat chops in a pan, recipe with photo:
1. Wash the meat, dry it with a paper towel, cut off the films and twist through a meat grinder. If there is excess fat, remove it as well. But do not remove the whole, otherwise the chops will be dry.
2. Peel the onions, rinse and twist through a meat grinder.
3. Peel the garlic and pass through a press. Add eggs to the minced meat, salt and pepper. You can also add any spices and spices. I put in Italian herbs and ground ginger powder.
4. Stir the minced meat well. It is best to do this with your hands, passing it between your fingers. You can also beat it off several times: lift it up and throw it back with force. This will release gluten from the meat and the chops will stick better in the pan.
5. Form round and flat chops about 1cm thick and 7-8cm in diameter.
6. In a skillet, heat the oil and add the chops to fry. Turn on a high heat and keep the chops on the heat for no longer than 3-4 minutes. So they will quickly become golden brown.
7. Flip the chops over and immediately add the sliced courgettes and tomato rings. This recipe uses frozen vegetables, you do not need to defrost them, but immediately place them on the meat. If the vegetables are fresh, then cut them: tomatoes into rings, and zucchini into bars.
8. Sprinkle vegetables with grated cheese, cover the pan with a lid, turn on medium heat and fry the meat for 5-7 minutes. Serve the prepared minced meat chops in a frying pan hot, freshly cooked.
