Guacamole is a cold appetizer, or a thick sauce, whichever is closer to you, pureed from avocado pulp (no peel and bone are used) with the addition of seasonings. The dish is traditionally known in Mexican cuisine and is believed to have Aztec roots. Today it is very popular all over the world. The most important thing is to find a ripe avocado and mash its pulp with lemon or lime juice and other spices. Lemon juice is an antioxidant, meaning it prevents oxidation of avocados and the brownish color of guacamole. The addition of citrus juice will keep the green color in the dish and the mass will not turn into something unattractive. Because an avocado is like an apple, it tends to darken when cut outdoors.
The consistency of guacamole can vary. Mudding the pulp with a fork makes a snack with pieces of food, and if you mix everything in a blender, you get a sauce that will perfectly suit many main dishes. There are many guacamole recipes that differ in additives, seasonings and the degree of grinding of the components. The mass can be added: tomatoes, chili peppers, onions or green onions, nuts, cilantro, various herbs, garlic, lime or lemon juice. This thick avocado dip is served along with corn chips, separately in a bowl, stuffed with eggs, seasoned with salads, etc.

Ingredients:
- Avocado - 1 pc.
- Cilantro greens - several sprigs (fresh, dried or frozen)
- Salt - pinch or to taste
- Ground black pepper - a pinch
- Garlic - 1 clove
- Lemon - 0.5 pcs.
Step by step preparation of guacamole (avocado sauce), recipe with photo:
1. Wash and dry the avocado with a paper towel. Cut around the bone with a knife and divide in two. Remove the pit and cut the pulp into any convenient shape, which you gently remove with a spoon.
2. Place the avocado pulp in the chopping bowl.
3. Add the peeled clove of garlic, chopped cilantro and 1 tsp to the avocado pulp. lemon juice.
4. Then season the food with salt and black pepper. You can add any other products you want.
5. Use a blender (submersible or stationary) or a chopper to beat the food until a homogeneous smooth mass is formed, so that there are no whole pieces. Chill the prepared Guacamole avocado sauce in the refrigerator for half an hour. Then put the mixture in bowls or use half an avocado peel for serving.
