But still the simplest, inexpensive and favorite recipe by many is herring with onions, oil and vinegar. It is this recipe that I will share with you today. This dish can be prepared not only for a festive celebration, but also for the daily menu. After all, even an ordinary family dinner of boiled potatoes with salted herring will be not only tasty, but sometimes healthier than expensive delicacies.
How to choose a herring?
When choosing a herring, you should first look at the gills. In high-quality fish, they will be elastic, dark red, but not falling apart and with a rotten smell. The gills are brown, indicating a long expired shelf life. The following can be determined by the eyes. Red eyes - unsalted herring with high fat content, cloudy - fish with caviar and not very fat. Also, high-quality fish has no abrasions, cuts and cracks, but has elastic meat, which you can try by pressing on the herring with your finger. White bloom on the skin indicates poor quality added salt with harmful impurities. Also pay attention to the brine containing the herring. If it is cloudy, do not buy such a herring, transparent - start recognizing the quality of the fish by the above-described signs.

Ingredients:
- Herring - 1 pc.
- Onions - 1 pc.
- Vinegar - 2 tablespoons
- Sugar - 1 tsp
- Refined vegetable oil - 5-7 tablespoons
Cooking herring with onions
1. Peel the onions, wash and chop into half rings. Combine it in a deep bowl with sugar and vinegar.
2. Pour in some boiled drinking water, stir and leave the onion to marinate for 15–20 minutes.
3. Peel the herring. To do this, make a longitudinal, not deep cut along the back from head to tail, this will make it easier to remove the skin. Then rip open the belly and remove the entrails. Cut off the tail, fins and head. Divide the fish along the ridge into fillets, from which remove all visible bones. Wash the fillets well and dry with a paper towel.
4. Cut the herring into thin slices about 1 cm thick and place in a deep bowl. Remove the onions from the marinade, squeeze out all the water with your hands and add to the fish. Season everything with refined vegetable oil.
5. Stir the foods well, put them in a salad bowl and serve.
