Shish kebab already sounds delicious and enticing. Naturally, no one will refuse a fragrant and juicy meat kebab, except that only vegetarians. But for such a category of the population, there are no restrictions on eating a vegetable kebab. Moreover, it can be prepared at any time, in your own kitchen in an oven or airfryer.
Vegetable shish kebab is a rather non-standard dish that is in vain deprived of attention. There are many recipes for it, and quite varied. The set of vegetables is absolutely not strict and is chosen by the chef at random. You can combine products even in the most unexpected solutions. This kebab will be a great side dish to the main meat or fish kebab. It can be both a spectacular snack and an independent meal of the festive table and country dinner. Moreover, such a kebab is very useful. It contains many vitamins, while it is low in calories. You can serve it on wooden skewers or lay it out on a large platter.

Ingredients:
- Eggplant - 2 pcs.
- Zucchini - 2 pcs.
- Tomatoes - 4 pcs.
- Salt to taste
- Refined vegetable oil - 5 tablespoons
- Wooden skewers - 5 pcs.
Cooking vegetable kebabs in the oven
1. Wash the zucchini, dry with a paper towel and cut into rings 8-10 mm thick.
2. Wash and cut the eggplants in the same way as the courgettes. If you feel bitterness in these fruits, then get rid of it. To do this, sprinkle the sliced eggplant rings with salt and leave for half an hour. When droplets form on the surface of the pieces, this is the disgusting bitterness that came out of them. Then just rinse the slices under running water and pat dry with a paper towel.
3. Wash the tomatoes and cut into rings. But, since their pulp is much more tender than the previous products, cut the tomatoes into larger ones, approximately 1, 2–1, 5 cm thick.
4. Alternately string vegetables on wooden skewers. Place the vegetable skewers on a baking sheet so that the vegetables do not touch the bottom. Thus, they will be evenly heated and cooked. Sprinkle the food with salt, pour over with vegetable oil and send to the oven heated to 200 degrees for 45 minutes. Turn the kebab over several times during baking.
Serve the prepared vegetable shish kebab. It can be consumed both hot and cold. It can also be used to make all kinds of hot salads.
