Making a squash pie
1. Wash the courgettes and eggplants, dry with a paper towel and grate on a medium grater. Bitterness can be removed from old eggplant fruits. With a young vegetable, such a process is not necessary.
2. Season the resulting vegetable gruel with salt and add the semolina. Mix everything and leave for 15 minutes so that the semolina swells a little.
3. Add the egg and mix well.
4. Grease a baking sheet with vegetable refined oil and line the squash dough in an even layer.
5. Wash the tomatoes, dry them, cut them into rings and place them on top of the dough.
6. Grind the tomatoes with grated cheese and bake in the oven for 30 minutes at 200 degrees. The pie can be served immediately after cooking, but it can also be eaten cold. By the way, if you wish, you can put filling on the cake, for example, mushroom. To do this, you need to fry any mushrooms until golden, then stew them with sour cream and put on a pie.
