Red rice in cooking

My roll recipe has a twist. We will not use classic white rice for the dish, but the most useful variety of rice - red. This elite product contains B vitamins, calcium, potassium, phosphorus, iodine, iron, as well as 8 invaluable amino acids that allow all body systems to function normally.

It should be noted that red rice is also nutritious, but its calorie content depends on the chosen cooking method. Calories per 100 g of product range from 351 to 411 kcal.

Red rice is quickly and easily absorbed by the body, due to the fact that it has a soft shell, which contains many nutrients, micro-minerals, vitamins and amino acids. This culture contains a lot of dietary fiber, which has a beneficial effect on the intestines, regulates the microflora of the colon and improves peristalsis. Rice is also used for weight loss, as it is nutritious and a person is quickly saturated. This product is useful for diabetics, as it normalizes blood sugar levels, and with its regular use, "bad" cholesterol is removed.

Ingredients:

  • Nori seaweed - 3 pcs.
  • Red rice - 100 g
  • Lightly salted salmon - 300 g
  • Hard cheese - 150 g
  • Wasabi sauce - 0.5 tsp
  • Soy sauce - 3 tsp
  • Salt to taste
  • Apple cider vinegar - 1 tsp

Cooking roll with salmon and red rice

1. Boil red rice. Whoever cooks it for the first time should not be afraid that it will boil down and turn into porridge. Due to its shell, the rice is denser, and it will not be possible to boil it. So, sort out the rice, since it is not polished, you may get stones. This can be done as follows. Put the rice on a flat surface and spread it over the table in one layer. This is how all the bad grains and debris can be seen. Put the sorted rice into a container, fill it with cold water and stir it with a spoon. Debris and flour, which are formed during the friction, will be separated from the rice. Drain the water carefully using a strainer and change the water until it is clear.

Put the washed cereal into a cooking container, add salt and pour boiling water 2-3 fingers above its surface. After boiling, reduce the heat to a minimum, remove the formed foam and cook the rice under the lid for 30-40 minutes, until it becomes soft and the liquid leaves. When cooking red rice, the water will turn dirty red. Don't let that scare you.

When the water is completely absorbed into the rice, turn off the pan, pour in the apple cider vinegar, stir and let the rice steep for 5-10 minutes.

2. While the rice is cooking, prepare the rest of the food. Cut lightly salted salmon into strips, about 1 cm thick.

3. Put the wasabi sauce in the gravy boat and pour the soy sauce, which mix well.

4. Wrap the mat (bamboo mat) with cling film and place the nori sheet (seaweed).

5. When the rice has cooled, place it in an even layer on the nori, pressing it down. At the same time, leave 2 cm of a free edge on one edge of the nori, on which do not spread the rice, but moisten it with water. This is necessary to secure the roll firmly.

6. On the other side of the nori, spread the cooked wasabi and soy sauce in an even layer.

7. Top with cheese, which you can grate or cut into strips.

8. Place the fish slices on top of the cheese.
