Colostrum is a thick and viscous yellow liquid with a high protein content, salty taste and peculiar smell. It is produced in mammals in the last days of pregnancy, and in the first days after childbirth. Its chemical composition differs from ordinary milk. For example, there are 4–5 times more proteins, and 20–25 times more globulin and albumin. However, it contains slightly less milk sugar and casein than milk.
When heated, colostrum coagulates, so it cannot be used to make butter, cheese and other products. In cooking, it is considered the most valuable food product. It is used to make pancakes, noodles are boiled on it, cooked with bacon, added to casseroles … But today I propose to cook a hearty sweet omelet with it. It turns out to be so tender, airy and soft that it just melts in your mouth.

Ingredients:
- Bovine colostrum - 100 g
- Egg - 1 pc.
- Sesame seeds - 1 dessert spoon
- Vegetable oil - for frying
Making a sweet omelet with colostrum
1. Grate the colostrum on a medium or coarse grater.
2. Combine the grated colostrum with the egg.
3. Add sesame seeds to foods.
4. Stir the mixture with a fork or small whisk until smooth.
5. Place the pan on the stove. Pour in vegetable oil, heat it well and reduce the temperature to medium. Add the egg mass, cover the pan and fry the omelet for about 2 minutes.
6. Then turn it over, cover again and fry on the other side until golden brown for the same amount of time. Do not overexpose the omelet on the fire for a very long time so that it remains airy and tender.
