I wash all the vegetables for the caviar, peel the carrots and onions. Cut the tomatoes into small cubes. Fry chopped onions and carrots until the onions are transparent in vegetable oil.
Cut the zucchini into small cubes and also send them to the pan.
When the zucchini starts to juice, add the chopped tomatoes. If it seems to you that the zucchini rind is a little tight, you can cut it off, but it is better to choose only the youngest zucchini for this dish. Season the dish with salt and pepper.
Wash the greens and chop finely, add to the caviar right before the end of cooking.
