Therefore, each housewife decides on culinary feats and surprises her family with a variety of healthy vegetable dishes that contain a huge amount of vitamins and minerals. Today I propose to cook a simple sweet pepper recipe with carrots in a pan.

This versatile dish has many benefits. Firstly, it is tasty, simple, fast, cheap and healthy. Secondly, this colorful dish is served both hot and cold. It is served as an independent light vegetable snack and a side dish for meat. It contains maximum benefits and minimum calories (no more than 58 kcal / 100g in a ready meal), while the dish will give a feeling of fullness for a long time. Third, for vegetarians and those who fast, this is a real godsend. Although meat lovers will not give up juicy and aromatic vegetables. The dish is perfect for any meal: lean breakfast, lunch or dinner. Therefore, I am sharing with you this simple recipe.

Ingredients:

  • Bulgarian sweet pepper - 400 g
  • Carrots - 1-2 pcs. (depending on size)
  • Ground black pepper - a pinch to taste
  • Vegetable oil - for frying
  • Salt - 1 tsp no slide or to taste

Step by step cooking of fried peppers with carrots:

1. Peel and wash the carrots under cold running water. Dry with a paper towel and cut into strips or quarters into rings.

2. Wash the bell peppers, remove the stalk, cut in half and peel the inside of the seeds. Cut the fruit into small strips. Although you can dice, but then cut the carrots in the same way so that the finished dish looks beautiful.

For this recipe, it is best to use peppers with thick and juicy walls. The ideal option is Bulgarian, but if this is not the case, you can take an ordinary sweet salad, like mine.

3. In advance in a deep frying pan over medium heat, heat the required amount of vegetable or olive oil and send the carrots into it. Fry it lightly over medium heat for about 5 minutes on all sides until light golden brown.

It is necessary to fry vegetables in a small amount of fat. If you stick to a correct and healthy diet, then bake them whole in foil in the oven or on the grill. Then cut, sprinkle with vegetable oil and stir, it will be no less tasty.

4. Add the chopped bell peppers to the pan and stir.

Other vegetables you like can be added to this dish. For example, green beans, eggplant, zucchini. To make the food look beautiful, cut all foods the same way.

5. Season vegetables with salt, black pepper and any spices and herbs. I used sweet ground paprika.

To change the nuances of taste and aroma, you can season the dish with suneli hops, Italian herbs, cilantro, basil, oregano, cardamom, ground garlic or fresh chopped garlic cloves. Alternatively, if you want a dish with gravy, you can add some tomato juice or twisted tomatoes. If you're cooking for adults, you can add some table vinegar, wine vinegar, apple cider vinegar, balsamic vinegar, white wine, or lemon juice. Follow your own preferences and tweak the recipe to suit your taste.

6. Fry carrots and peppers over medium heat for about 10 minutes, stirring occasionally until golden brown and soft. At the same time, you should not stew vegetables, they should not become too soft and turn into porridge. In this case, almost all useful substances will evaporate and the taste of the finished food will deteriorate. The vegetables should remain slightly firm and keep their shape well.

Put the finished dish in a salad bowl, garnish with fresh chopped herbs, for example, parsley, and serve. Such a bright and rich treat is perfectly stored in the refrigerator in a closed container for several days, retaining all the useful properties and taste.
