Ingredients:
- Cottage cheese - 200 g
- Apricots - 500 g
- Baking soda - 0.5 tsp
- Flour - 300 g
- Sugar - 100 g or to taste
- Butter - 100 g
- Salt - a pinch
Step-by-step preparation of a roll with apricots from curd-shortcrust pastry, recipe with photo:
1. Use a food processor with a knife attachment to quickly knead the dough. If there is no such kitchen assistant, knead the dough with your hands. But do it quickly so the oil doesn't start to melt. Otherwise, the dough will not be crumbly and crunchy.
2. Place the curd in the bowl of a food processor. If desired, you can pre-grind it in a meat grinder or blender. Then add the sliced butter. Do not melt the butter, use not frozen and not at room temperature, but rather cold from the refrigerator.
3. Add flour to the food processor and sift it through a fine sieve to enrich it with oxygen.
4. Knead a soft, pliable and elastic dough. The products should be mixed with the curd and the dough will acquire a homogeneous structure.
5. Roll out the dough with a rolling pin into a thin, rectangular 5 mm layer.
6. Wash the apricots, dry them, remove the seeds and spread over the dough. If you are using frozen fruits, defrost them first and drain the liquid.
7. Sprinkle sugar over the fruit. If the apricots are frozen, sprinkle them with more flour. During the baking process, it absorbs the moisture released from the fruit.
8. Roll the dough over on three sides and cover the filling.
9. Roll the dough into a roll.
10. Place it seam side down on a baking sheet. Line the baking sheet with parchment paper or use a silicone mat.
11. Make transverse shallow cuts along the top of the roll and brush it with egg, milk or butter so that it has a golden hue after baking.
