1. Prepare food for the dough. Butter should be cold from the refrigerator, but not frozen or warm. Eggs should also be from the refrigerator. Sift the wheat flour through a fine sieve to enrich it with oxygen and combine it with salt and sugar.
2. For the filling, take apricots and sugar. Fruit can be fresh or frozen. Wash fresh fruits, dry them, remove the seeds and divide them in half. Defrost frozen apricots naturally without using the microwave.
3. Place the sliced butter in the bowl of a food processor to prepare the dough.
4. Then add raw eggs.
5. Add flour with salt and sugar.
6. Knead to a homogeneous dough so that it does not stick to the hands and sides of the dishes. If you don't have a food processor, knead the dough with your hands. But do it quickly so that the dough does not heat up from the warmth of your hands. shortbread dough does not like heat. If it heats up, the baked goods will not be crispy.
7. Remove the dough from the food processor and roll it out into a thin rectangular sheet about 5 mm thick.
