  1. Dissolve salt in water, pour in an egg and stir.
  2. Pour flour on the table with a slide and make a hole in it, into which pour the liquid components in a thin stream and carefully knead the tough dough.
  3. Wrap the finished dough with foil and set aside for 20 minutes. Then wrap it up, wrap it again and leave for 20 minutes.
  4. Wash the cherries, dry them and remove the seeds. Cover them with sugar and leave for half an hour. Then discard it in a colander, but save the juice.
  5. Divide the dough into equal parts and roll each one in turn with a thickness of no more than 2 mm.   7. Pour water halfway into the saucepan, tie cheesecloth on top so that the edges do not sag, otherwise they will catch fire, and cover with a lid.
  8. After boiling water, put the dumplings on cheesecloth at a short distance from each other, because they will increase in size when cooked. Cook them under the lid for 5 minutes.

Kefir dumplings are simply made with a fabulous taste. In the absence of kefir, you can choose any other fermented milk product, like yogurt, drinking natural yogurt, sour milk or bifidok.

Ingredients:

  • Thick kefir - 500 ml
  • Salt - 0.5 tsp
  • Sugar to taste
  • Quicklime soda - 1 tsp with a slide
  • Pitted cherries - 500 g
  • Flour - 750 g

Step by step cooking:

  1. Pour flour into a large bowl, add a pinch of sugar, salt and baking soda. Okay, stir the loose ingredients.
  2. Make a depression in the flour mass and pour in kefir.
  3. Stir the dry and liquid ingredients intensively and quickly with a spoon to moisten the flour.
  4. Next, put the dough on the countertop with flour and knead with your hands, periodically dusting the work surface with flour. The dough will stick to your hands, but that's okay.
  5. Knead the dough so that it does not stick to your hands, while remaining tender, stretching and delicate. Wrap it with cling film and leave for 10-20 minutes.
  6. Wash the cherries, dry them and remove the seeds.
  7. Divide the dough into parts, stretch each of them with your hands into a layer, put on a floured surface and roll out with a rolling pin 3 mm thick.
  8. With a glass with sharp edges, cut out round blanks, in the center of which pour a little sugar and put the berries. Lift the opposite edges of the dough up and pinch, seal them with a curly "comb" if desired.
  9. Boil the dumplings either in a saucepan of boiling water as described in the examples above. However, it is most delicious to steam kefir dumplings in any convenient way.
