The meatball soup is one of the favorite first courses of millions of people. Which is not surprising, since it cooks quickly, the products are affordable, but it turns out appetizing and tasty. Meatballs can be made from any minced meat. Most often they use meat or chicken, less often fish. Mixed minced meat is especially tasty, where different varieties of minced meat are combined. A distinctive feature of meatballs is that nothing is added to the minced meat, except for meat, onions, salt and pepper, sometimes you can also see eggs.
There are many recipes for soups with meatballs. They differ in composition. Potatoes, carrots, onions, tomatoes, bell peppers, cabbage, zucchini, green beans, etc. are added to soups. Pasta, legumes, rice, pearl barley are also added to taste. Even borscht and cabbage soup are cooked with meat balls. However, since soup is a quick dish, beans and barley are added less frequently. Although if you have the time, then based on today's recipe, you can prepare a dish with meatballs and beans, peas or chickpeas.

- Meat - 300 g
- Garlic - 1 clove
- Salt - 1 tsp or to taste
- Ground black pepper - a pinch
- White cabbage - 200 g
- Onions - 1, 5 pcs.
- Twisted canned tomatoes - 4-6 tablespoons
- Potatoes - 2-3 pcs.
- Broth - 300 ml (optional)
- Allspice peas - 3 pcs.
- Bay leaf - 2 pcs.
Step by step cooking tomato soup with meatballs and cabbage, recipe with photo:
1. Wash the meat, cut off the film with veins and cut into pieces for a meat grinder. Peel, wash and chop half of the onion and a clove of garlic.
2. First pass the onions with a clove of garlic through a meat grinder with a medium wire rack.
3. Then twist the meat.
4. Season the minced meat with salt and pepper and mix well with your hands. After that, do the following procedure: take the minced meat with your hands, lift it up and forcefully throw it back into the plate. Do this 5-6 times. This is necessary to soften the fibers and release the gluten. Thanks to this, the meatballs will not fall apart, but will hold on tightly. Then form the minced meat into medium-sized round meatballs. I preferred to make them with a diameter of 3 cm.
5. Peel the potatoes, wash and cut into cubes.
6. Peel the white cabbage from the upper inflorescences. they are usually dirty, wash and chop thinly into strips.
7. Place potatoes and peeled onion in a saucepan. Pour in broth or water and place on the stove to boil. Remove the onion from the soup at the end of cooking. It is necessary that it only give off the taste, aroma and nutrients.
8. Bring the contents of the saucepan to a boil and reduce heat to medium. If foam forms on the surface, then remove it with a slotted spoon.
9. After boiling for 10 minutes, add the shredded cabbage to the saucepan.
10. Next, lower the meatballs and immediately turn on high heat.
11. I draw your attention to the fact that the meatballs should be placed in boiling water so that the meat is immediately covered with a film that will preserve the juiciness in the pieces. Otherwise, the meatballs will become rubbery.
12. Put bay leaf, peppercorns, black pepper into the soup and season with salt.
13. Next add the twisted tomatoes. If there are fresh tomatoes, then put them in slices. Boil the food again, reduce the temperature, close the pan with a lid and cook until cooked for 10-15 minutes. Serve tomato soup with meatballs and cabbage with croutons, croutons, or fresh bread. If desired, you can put a spoonful of sour cream or a little chopped greens in each plate.
