Cabbage soup - tasty, budget-friendly, healthy. White cabbage is familiar to most people. She has especially proven herself well for a dietary menu. Since it has a reverse calorie content, i.e. the body spends more calories on its digestion than it receives. Therefore, today we will cook a healthy carbohydrate-free cabbage soup with meatballs. It is both nourishing and healthy at the same time, and is easy to prepare, while using it you can get rid of the hated kilograms. Take this food into your arsenal, maintain the health of your family, without going beyond the family budget.
For this recipe, a minimum set of products is used: cabbage with herbs, tomato sauce and meat for meatballs. You can use any type of meat for the meatballs, depending on your preference. If you want a more dietary dish, choose chicken or veal. Otherwise, you can use pork or beef. In addition, you can take any varieties of cabbage, not just white cabbage. Red, Peking, colored, broccoli, Brussels sprouts, etc. will do. You can also use assorted cabbage. In addition, the taste of the soup will be complemented by other vegetables: carrots, onions, tomatoes, peppers, zucchini, etc.

Ingredients:
- Meat (for meatballs) - 300 g
- White cabbage - 400 g
- Bay leaf - 3 pcs.
- Allspice peas - 3 pcs.
- Tomato paste (homemade) - 100 g
- Dill - bunch
- Salt - 1 tsp or to taste
- Ground black pepper - a pinch
Step by step preparation of carbohydrate-free cabbage soup with meatballs, recipe with photo:
1. Wash the meat, cut off the veins with a film and twist it through a meat grinder. Season the minced meat with salt and ground pepper and mix well with your hands, passing the minced meat between your fingers. Then beat it off, lift it up and throw it back into the plate.
2. Wash the white cabbage, pat dry with a towel and chop into thin strips.
3. Form the minced meat into small cherry-sized meatballs, but you can make the meatballs larger, like a walnut.
4. Pour water into a saucepan and bring to a boil. Dip the cabbage, bay leaf, peppercorns and boil.
5. Immediately dip the meatballs into the pan. I draw your attention to the fact that meatballs are dipped exclusively in boiling water. Putting them in cold water makes the meatballs rubbery.
6. Boil the broth and turn the temperature on.
7. Pour the tomato paste into a saucepan.
8. Next, place the finely chopped dill.
9. Season the soup with salt and pepper and cook until the cabbage is done, about 10-15 minutes. Serve the soup after cooking with black bread or croutons.
