1. Place the slicer attachment in the bowl of the food processor and add cold butter. If you use warm foods, the cake will not be crumbly. If you don't have a food processor, knead the dough with your hands. To do this, grate the butter or cut into smaller pieces.
2. Add chilled sour cream to the bowl of the food processor.
3. Next add flour, a pinch of salt and baking soda.
4. Switch on the appliance and quickly knead the dough.
5. Remove the dough from the processor and shape it into one large lump.
6. Place the dough in a plastic bag and refrigerate for half an hour or in the freezer for 15 minutes. If desired, this dough can be divided into pieces and frozen in the freezer for future use.
7. Meanwhile, defrost the plums. Place them in a sieve, set on a deep plate and leave for a while. Do not pour out the juice that will collect in the bowl, but cook the compote on its basis.
8. Remove the dough from the refrigerator and divide it into two parts, where one should be 1.5 times larger than the second.
9. Grate most of the dough on a coarse grater and place the shavings in an even layer in a baking dish, which is covered with baking parchment.
10. Place the thawed plums on top of the dough. Sprinkle them with sugar and a little flour. During baking, the maca will take in the juice, which will stand out from the fruit and the cake will not turn out to be "thick".
Sprinkle the plums on top with the remaining dough, which also grate. If there is no grater, twist the dough through a meat grinder. Send the pie on sour cream with frozen plums to bake in a heated oven to 180 degrees for 40 minutes. When the item has acquired a golden hue, remove it from the oven. Cool the pie, sprinkle with powdered sugar if desired and serve to the dessert table.
