1. Put the pumpkin seeds in a sieve, wash thoroughly to get rid of dust and dirt. Let the seeds dry by spreading them out on a cotton towel.
2. Place them in a preheated skillet. Do not fry all the seeds at once. They only need to cover the bottom of the pan with a thin layer. If there are more seeds, then they will fried unevenly: some will remain raw, while others will burn.
3. Turn the heat to medium, and stirring constantly with a wooden or silicone spatula, fry them until they are light brown. After 5 minutes, the seeds will begin to emit a characteristic crackle, immediately reduce the heat. Monitor their condition carefully and try to stop the frying process in time. Usually, pumpkin seeds in their shells are fried in a pan for no more than 20 minutes, without the shell - 5-7 minutes.
4. Put the prepared fried pumpkin seeds in a frying pan in an even layer on parchment paper or newspaper spread on the table and leave to cool completely. Do not leave them in a hot skillet, especially if it is cast iron. Otherwise, the heat treatment will continue further and the seeds will overcook.
