- Shortcrust pastry - 400 g

Let's prepare cookies for a shortbread base. Break it into small pieces and grind it into flour. There are several ways to do this. For example, fold the biscuits into a zippo bag, place them between layers of a thin kitchen towel, and walk well with a rolling pin, shaking occasionally so that all large pieces are crushed. Or you can simply place it in the bowl of a blender or food processor and in seconds you will have shortbread flour.
We heat the butter on a fire or in a microwave oven and pour it into the sand mass. Stir to get a dense homogeneous dough similar in consistency to plasticine.
Put the shortbread dough into a detachable baking dish, distribute it evenly over the entire surface and tamp it carefully with your hands, using a tablespoon or the bottom of a glass. We send it to the refrigerator or freezer so that the oil hardens. The base of the cheesecake is ready.
Pour gelatin with water and leave to swell for 25-30 minutes. When all the crystals increase in volume several times, we heat in a water bath or in a microwave. Leave to cool to room temperature.
We wash the blueberries, remove the twigs, leaves, spoiled berries and dry on a paper towel. We leave a few berries for decoration, and interrupt the rest with an immersion blender.
