Chicken salad is a dish intended for a festive table. At the same time, it is able to make an ordinary dinner excellent. Chicken meat has a neutral taste and mild aroma, so it goes well with many products: eggs, cucumbers, mushrooms, cheese … Chicken for salad is mainly used boiled, but sometimes it can be replaced with smoked or baked. Salad is usually dressed with mayonnaise, vegetable oil, sour cream or a complex component sauce. Today I propose to prepare a salad with chicken, cucumber and herbs. Cucumbers add a touch of freshness and a pleasant crunch, green onions add juiciness, and chicken satiety. This salad is especially good in the summer, when a huge abundance of fresh herbs and vegetables is sold on store shelves.
For the recipe, choose cucumbers with whole skin, without traces of damage and a strong unpleasant odor. If the skin of the gherkins is dense or tasteless, remove it first. Take fresh chicken, give preference to fillets or breasts. You can boil it or bake it in the oven. If the poultry is pre-frozen, defrost it correctly. Transfer the carcass to the refrigerator and keep it until it is completely thawed. Slow defrosting will maximize the preservation of all the beneficial properties of the chicken.

Ingredients:
- Chicken or any of its parts (boiled, baked, boiled) - 200 g
- Soy sauce - 1 tsp
- Cucumbers - 1 pc.
- Salt - a small pinch
- Cilantro - 5 branches
- Mustard - 0.25 tsp
- Eggs - 1 pc.
- Olive oil - 1 tablespoon
- Green onions - 6 feathers
Step by step cooking salad with chicken, cucumber and herbs, recipe with photo:
1. Cut the prepared chicken into pieces or tear along the fibers.
For the salad, I recommend taking the breast. You can boil it, steam it, bake it in the oven, or fry it in a pan. The most useful steam, but also the least tasty. Boiled poultry is delicious, but boiled with onions, carrots and parsley root. The easiest way to bake the chicken is to wipe it off with salt and pepper. Frying is also simple: add salt, pepper and fry in oil for 7-10 minutes. But it is better not to fry the breast, because it will be dry. Smoked poultry is also suitable for salad.
2. Pre-boil the eggs to a cool consistency. Transfer to cold water, cool, peel and cut into cubes. You can also make an omelet from the eggs, fried in a pan or steamed, which then also cut.
3. Wash the cucumbers, dry with a paper towel and cut into thin half rings.
4. Wash greens and chop finely.
5. Wash, dry and chop the green onion feathers.
6. Place all products in a salad bowl.
7. For dressing, add olive oil, soy sauce, mustard and a pinch of salt to a small bowl.
8. Stir the sauce well.
9. Season the food with the dressing and mix well the salad with chicken, cucumber and herbs. Serve it to the table after cooking.
