Gedlibzhe is a visiting card of Kabardian cuisine. Simple, hearty and juicy chicken dish with sour cream sauce made from fried onions, garlic and spices. In the classic version, the food is prepared from small chickens or whole young chickens, which are chopped into several pieces. But now chefs are increasingly deviating from tradition and making dishes from ordinary home or broiler chickens, chicken fillets or chicken legs. There are even options for gedlibzhe made from other meats like veal, turkey, etc.
The main basic ingredients of the dish are chicken, sour cream and onions, the rest of the ingredients, spices and herbs can be changed depending on taste preferences. There are quite a few analogs of the combination of chicken with sour cream in other cuisines of the world. But in this dish, the main role is assigned to the unusual sauce. To prepare it, you will need onions and sour cream. But, despite the fact that ordinary products are used, the sauce is tender and tasty, and chicken meat is obtained with an amazing aroma of spices and a harmonious taste. It may seem to you that the recipe is complicated, but in practice it is easy to prepare gedliebge and it is not at all costly. The dish can be eaten with any side dish or even without it. Ingredients:
- Chicken - 1 carcass
- Vegetable oil - for frying
- Garlic - 1-2 cloves
- Spices and herbs (any) - to taste
- Onions - 1-2 pcs.
- Salt - 1 tsp or to taste
- Sour cream - 250 ml
- Ground black pepper - a pinch
Step-by-step preparation of chicken gedlibzhe, recipe with photo:
1. Wash the poultry carcass, dry it with a paper towel and cut into pieces. If you wish, you can remove the skin, because it contains the most fat and calories.
2. In a skillet, fry the chicken in hot vegetable oil until golden brown on all sides.
3. Peel the onions and garlic, wash and cut into any size.
4. In another skillet in vegetable oil, sauté the onion until transparent.
5. Place the fried onions in a convenient bowl and chill slightly so as not to burn yourself.
6. Use a blender to chop the onion fry until smooth and puree.
7. Pour sour cream into the onion mass, add salt, black pepper, spices and pass the garlic through a press.
8. Stir the sauce well.
9. Pour the sour cream and onion sauce into the chicken pan.
10. Boil the food, reduce the temperature to the lowest setting, close the lid and simmer the chicken gedlibge for 45 minutes. Serve hot treats with any side dish or vegetable salad.
