One of the differences from the original recipe is the pasta itself. The classic version of the dish uses spaghetti. I took the straws. Ingredients:
- Pasta - 100 g
- Olive oil - for frying
- Cilantro or parsley - a few twigs
- Eggplant - 0.5 pcs.

Step by step preparation of pasta with fried eggplant in Sicilian style, recipe with photo:
1. Pour water into a saucepan, add a pinch of salt and bring to a boil. Dip the pasta into boiling water and cook for 1 minute less than indicated on the manufacturer's packaging. Bring them to the al dente state.
2. Wash, dry and cut the eggplants into bars. If the vegetable is ripe, it contains solanine, which adds bitterness. To remove it, sprinkle the sliced fruits with salt and leave for half an hour. Then rinse them under running water and dry them.
3. Wash parsley or cilantro and chop finely.
4. Pour olive oil into a frying pan and send the eggplants into it.
5. Fry the eggplants over medium heat until lightly golden brown. Season them with a pinch of salt and black pepper if desired. If you want a leaner dish, then prepare the baked eggplant in the oven in advance. Then all that remains is to stew them for a few minutes under the lid and mix with spaghetti.
6. Tilt the boiled pasta on a sieve to glass the water and send it to the pan with the eggplant.
7. Add chopped herbs and pour in 2 tablespoons. water in which the pasta was cooked.
8. Stir the food and simmer covered for 5 minutes over low heat. Serve the prepared Sicilian-style pasta with fried eggplant immediately after cooking.
