Frittata - in our understanding, an ordinary omelet, but in the Italian style. However, unlike the usual omelets, it is not the eggs that play the leading role, but the filling, which can be varied. Another distinctive feature of the classic omelet, frittata is first fried in a pan as usual, and then sent to bake in the oven. And all kinds of vegetables, cheese and spices are added to the eggs. Well, since the season of fresh summer vegetables still lasts, you should definitely try an omelet with fresh zucchini and tomatoes.
Before you start preparing an Italian breakfast, you should consider some of the nuances:
- It is advisable to use zucchini young, slightly greenish. These will cook faster and taste more delicate.
- If vegetables will be pre-fried or stewed before making an omelet, then it is better to chop them coarsely, and if you prefer to mix them with an egg mixture, then it is better to grate them.
- Since the zucchini does not have a special flavor, add more greens to the dish.
- The classic frittata prescribes the use of only hard cheese. But you can always experiment with other types, for example, feta cheese, processed cheese, suluguni, mozzarella, etc.
- It is also worth noting that for this dish you will need a frying pan with a removable handle, or with a handle that can be heated in the oven.

Ingredients:
- Zucchini - 0.5 pcs.
- Tomato - 1 pc.
- Eggs - 2 pcs.
- Greens - a bunch

- Vegetable oil - for frying
- Hard cheese - 50 g
Cooking zucchini and tomato frittata
1. Wash zucchini and tomatoes and pat dry with a paper towel. Then with a sharp knife, cut into rings about 8 mm thick.
2. Break the eggs and pour into a deep container.
3. Add finely chopped greens, salt, any spices to the eggs and add 2 tbsp. drinking water. Greens can be used frozen or dried. And instead of water, add sour cream or milk in the same proportions: 2 tbsp.
4. Whisk the eggs well until smooth.
5. Heat the frying pan, add vegetable oil and heat it up. Lay the grilled zucchini tightly against each other.
6. Fry the courgettes on one side until golden, then turn over to the other side. Season them with salt and top with chopped tomatoes, which are also lightly salted.
7. Pour the beaten eggs over the vegetables and place the pan on the stove with the lid closed. Cook the omelet over medium heat for about 5 minutes. After that, sprinkle the dish with grated cheese and send it to bake in the oven for 5 minutes.
8. Serve hot frittata immediately after cooking. Before use, you can sprinkle it with herbs, pour over with ketchup or your favorite sauce.
This breakfast is very good for a low-carb diet.
