Frittata is, in our understanding, an ordinary Italian omelet. Unlike the usual recipes, it is first fried in a skillet, and then baked a little until cooked in the oven. Therefore, to prepare it, you need to immediately take care of such a pan that can be placed in the oven. Frittata can be prepared with a wide variety of fillings, so you can supplement or replace the set of products with other ingredients to your liking. Various vegetables, spices, cheese, meat products, etc. are added to the dish as a filling. The scope for creativity is endless here. By changing the ingredients and fillers of frittata, you can prepare delicious, healthy and varied food every day.
Since now is the high season for fresh vegetables, it is worth trying an omelet with fresh zucchini and tomatoes, accompanied by herbs and cheese. Ingredients are required simple, which can be found in every home, while the dish turns out to be tasty and quite satisfying. You can beat eggs on their own, with the addition of water, milk, cream. The result is a delicate omelette with a minimum of fuss. Nothing needs to be fried and processed for a long time beforehand. Therefore, such a dish is suitable for a quick breakfast for all family members.

Ingredients:
- Zucchini - 3-4 rings
- Salt - pinch or to taste
- Eggs - 2 pcs. Water - 2 tablespoons
- Tomatoes - 1 pc. medium size
- Greens (any) - several branches
- Olive oil - for frying
- Cheese - 50 g
Step by step cooking frittata with zucchini, tomatoes, cheese and herbs, recipe with photo:
1. Wash the zucchini, dry it with a paper towel, cut into 5 mm rings, which are cut into 4 parts. Wash the tomatoes and cut them into small cubes. Grate the cheese on a medium or coarse grater. Wash greens and chop finely.
2. Pour the eggs into a deep container, add water and a pinch of salt.
3. Whisk the eggs until smooth. You do not need to whip into a fluffy mass.
4. Pour vegetable oil into a frying pan and heat slightly. Add the zucchini pieces and turn on medium heat.
5. Sear the courgettes on one side and turn them over to the other side. Place them on one side of the pan as the filling will be covered with an omelet.
6. Pour the egg mixture over the zucchini and swirl with the pan until it spreads over the entire area.
7. Place tomato slices in half of the omelet.
8. Spread half the cheese on the tomatoes.
9. Sprinkle food with herbs.
10. Then add the remaining cheese.
11. Tuck the free edge of the omelet, cover the pan with a lid and send it to cook in a preheated oven to 180 degrees for 5 minutes. However, if you leave the pan to cook on the stove, the omelet will also taste good. Serve the frittata with zucchini, tomatoes, cheese and herbs to the table immediately after hot cooking.
