To prepare these pancakes, you will need small capelin caviar. But if there is caviar from another type of fish, then it is also suitable for the dish. Such pancakes are prepared very quickly, literally in a matter of minutes, and they turn out to be the most tender and soft.
In preparing this dish, the most important thing is to make the pancakes soft. Since the caviar itself becomes quite dense during frying, therefore sour cream or cream is necessarily added to the dough. These products will turn the consistency of food into a soft delicacy.
You can buy caviar for pancakes, or prepare yourself. For the latter, you can proceed as follows. Every time you buy fish, remove the caviar from it and send it straight to the freezer without washing it out, where it is stored in an airtight package (bag, plastic container). And when a sufficient amount of caviar has accumulated, then defrost it and prepare a delicious meal.

- Caviar of capelin or other fish - 500 g
- Cream - 200 g
- Eggs - 1 pc.
- Salt - 1 tsp no slide or to taste
- Ground pepper - pinch or to taste
- Vegetable oil - for frying
- Soy sauce - 1 tablespoon
- Any spices and spices for fish - to taste
Making capelin roe pancakes
1. Place caviar in a fine sieve and rinse under running water. Leave it in a sieve to drain all the liquid, while stirring it several times. Then transfer the caviar to a deep bowl and pour in the cream. You can use sour cream instead. In addition, if you want a more dietary dish, then sour cream can be used with a low percentage of fat.
2. Drive an egg into the minced meat, season with salt, ground pepper, any spices and herbs to taste.
3. With a blender, beat all the food until smooth, so that all the eggs turn into a smooth mass. If there is no blender, then first twist the caviar in a meat grinder through a fine wire rack or try to grind it through a fine metal sieve.
4. Place the frying pan on the stove, add vegetable oil and heat well. Spoon the dough with a tablespoon and place a portion in the pan. It will spontaneously spread over the bottom surface, taking a round shape.
5. Fry pancakes over medium heat for literally 2 minutes on each side. They are grabbed instantly, so you cannot leave them for a minute. During frying, the pancakes literally change their color before our eyes, turning into a bright orange, sunny and mouth-watering dish.
6. Serve ready-made fish roe pancakes with any sauces. For example, sour cream, garlic sauce, or any other sauce based on lemon juice or soy sauce. You can serve any porridge, rice, spaghetti or potatoes as a side dish for pancakes.
