Siberians believe that it is necessary to prepare pine nuts for milk as responsibly as to prepare Easter cakes - to do it only with good thoughts, ideally by reading a prayer. Otherwise, the cedar will not share strength and longevity.
To prepare the product at home, you will need 2 flat tablespoons of pine nuts and 180 ml of water. Place the nuts in a blender bowl, pour 30 ml of water over them and beat. When it turns white and looks a lot like cow's milk, add the rest of the water and continue whisking for a few more minutes. Strain the drink and serve it right away.
It is recommended to store cedar milk in a glass, hermetically sealed container, in the refrigerator. Within 3-5 days, its composition does not change at all, for 7 days - insignificantly, and after a month it is drinkable, but by this time it loses most of the useful components.
Recipes for dishes and drinks with cedar milk

- Ratatouille … Take 700 g of chicken thighs, rinse, pat dry. Remove skin and bones. Finely chop 3 garlic cloves, 1 large onion. Cut 2 eggplants and 2 tomatoes into large pieces. Take 1 pod of hot pepper, remove the seeds and stalk, chop the pepper. Chop the chicken, season with salt and pepper, bread in flour. Fry the chicken until golden brown. Remove from the pan. In it, fry the eggplants in vegetable oil, then add onions, garlic and hot peppers. Then add the tomatoes. Return the chicken to the pan. Fry the ingredients for 1-2 minutes, pour in 150 ml of cedar nut milk. Reduce heat and cover, simmer for 5-7 minutes. Serve hot, sprinkle with lemon juice and herbs.
- Refueling … This fresh dressing is perfect for all types of salads, vegetables, fish and meat dishes. Take half an avocado and send it to a blender. To it add 2 tablespoons of finely chopped herbs to taste, 1 teaspoon of chopped garlic, a pinch of ground pepper, salt, 120 ml of cedar milk and 1 teaspoon of lemon juice. Grind the ingredients until smooth. Use the sauce right away as it loses its flavor during storage.
- Biscuits … Grind 250 g butter, 100 g white sugar and 100 g brown sugar. Slowly pour in 45 ml of cedar milk, stir well, add 1 teaspoon of vanilla extract and stir again thoroughly. Sift 280 g of flour, add it to butter and milk. Add 1 teaspoon of baking soda, a pinch of salt. Stir in 250g chocolate drops. Spoon the biscuits onto a baking sheet lined with parchment. Bake in an oven preheated to 180 degrees for 10-15 minutes. Let the liver cool on a baking sheet, serve with warm milk.

- Tea … Pour boiling water over the teapot and let it warm up for 5-7 minutes. Pour 1 tablespoon of large-leaf tea into a warm dish, pour boiling water over it, let it brew for 5 minutes. Dilute the tea leaves in a 1: 1 ratio with cedar milk, add honey and cinnamon. Drink hot.
- Coffee … Pour a level tablespoon of ground coffee into a deep Turk and pour 100 ml of water. When the coffee is almost boiling, add 100 ml of cedar milk to the turk. Let it boil, remove from heat, pour into cups. Serve with whipped cream.
