1. First of all, prepare the marinade. To do this, mix the soy sauce with sugar, add mustard and pepper to the mixture. Leave it for a while so that the sugar crystals dissolve completely.
2. Separate the head from the fish, cut off the fins, peel off the husk, remove the insides and cut into portions.
