A pork chop, or another kind of meat, is a cutlet, as it happened historically. Although, in essence, it is not a cutlet. For us, a familiar cutlet is a product made from meat or other minced meat fried on a wire rack or in a frying pan. In European cuisines, a cutlet is usually called a thin piece of meat cut from a certain part of the carcass. Only the cooking methods are similar, but the taste is completely different.

1. Wash the pork, dry it with a paper towel and cut into thin slices 1 cm thick. If there is a lot of fat on the meat, remove it. Also remove the cores with films.

2. Use a kitchen hammer to beat off the meat on both sides. Do not hit it hard so that it does not break. The pieces will increase in volume and the thickness will decrease to about 5 mm.
