Morel mushrooms, however, like other forest mushrooms, require preliminary preparation before they are eaten. First of all, they are washed in several waters to wash out sand and small debris, as well as insects that hide in the folds of the cap. Then morels are boiled twice. Only after that morels are subjected to further heat treatment - fried, stewed, baked. Today we will make an omelet with morels - delicious and simple.

Ingredients:
- Morels - 300 g
- Eggs - 2 pcs.
- Salt - a pinch
- Chives - 4 feathers
- Vegetable oil
Step-by-step cooking of omelet with morels - photo
We wash the mushrooms in several waters. Fill them with cold water and bring to a boil. Cook for five minutes and change the water. Bring them to a boil the second time and cook for 15 minutes. Then we put them in a colander so that the glass is water.
Now heat the vegetable oil in a frying pan and put the morels in it. We did not cut them, we left them as they are. We fry the morels for just 3-4 minutes.
Beat the eggs in a separate bowl and add salt and pepper. Pour them into the pan.
When grabbing the edges of the omelette, lift them up with a spatula or slide them towards the center. Repeat this operation several times. Sprinkle the omelet with chopped green onions.
Cook the omelet for another 3-4 minutes.
