Ingredients:
- Rice - 0.5 tbsp.
- Dried apricots - 70 g
- Walnuts (peeled) - 90 g
- Poppy - 85 g
- Raisins - 85 g
- Sugar - 2 tablespoons
- Linden honey - to taste
Making rice kuchi:
- Pour boiling water in different containers thoroughly washed - dried apricots and raisins. Leave to infuse for half an hour. Steam the poppy separately for several hours.
- Rinse the rice with cold running water as many times as necessary to remove the turbidity. After pouring one and a half glasses of clean running water over the rice, cook it over a moderate heat in a saucepan, without covering it with a lid, until all the water has disappeared. After turning off the heat, leave the rice to cool under a covered container.
- Drain the already swollen poppy seeds and rub them with a spoon (blender), adding sugar, until a white "milk" stands out.
- Chop dried apricots and walnuts.
- If the honey is not liquid enough, melt it in a water bath and then add it to the rice. Add the rest of the ingredients and mix.
