Summer is the season for a variety of fresh vegetables. Therefore, it is important to use them in the preparation of all kinds of dishes, saturating and replenishing the body with seasonal vitamins. For fans of pies, I suggest preparing it with meat and eggplant filling. Such a delicate meal will delight both lovers of vegetable dishes and more hearty food. And in order to quickly cook a delicious dinner, we will use ready-made puff or yeast dough for the pie, which will greatly simplify and speed up the cooking process. But, of course, if you want to make the dough yourself, then use any proven recipe.
In addition, this pie is a great opportunity to use the leftovers of boiled or stewed meat. And the meat can be used in absolutely any varieties, from a dietary rabbit to fatty lamb. You can also diversify the filling for the pie by adding or replacing the meat with mushrooms, they go well with eggplants. In any case, you will get such a delicious and satisfying snack cake with a delicate and juicy filling that you don't need any side dish to go with it. You can only trim any fresh vegetable salad.

Step-by-step preparation of a puff pastry with meat and eggplant
1. For the preparation of the pie, I recommend using homemade minced meat, so it will be juicier, tastier, fresher and of better quality. To do this, rinse the meat, wipe it with a cotton towel and twist it through a meat grinder with a medium wire rack.
2. Wash the eggplants, cut off the ends and cut into cubes with sides of 1 cm. If you feel bitterness in the vegetable, add a little salt and leave for half an hour. When droplets form on its surface, rinse it under running water and rinse off the solanine that has come out of it. However, if you use dairy fruits, then usually there is no bitterness in them, so such a manipulation can not be carried out.
3. Prepare two pans in which to heat the vegetable oil. Put minced meat in one pan, chopped eggplant in another. Set the heat to slightly above medium and cook until half cooked. Since eggplants absorb a lot of oil, I recommend frying it in a non-stick pan. It will require less oil. And place the minced meat in a pan in one layer so that it is well fried. Otherwise, if it is piled up in a mountain, it will begin to stew and release a lot of juice, from which the filling will become drier.
4. Then combine the minced meat and eggplant together in one pan, add tomato paste, salt, ground pepper and any spices and spices. Basil, nutmeg, cilantro, oregano, etc. go well with these products.
5. Stir the food and simmer for literally 5-7 minutes under a closed lid.
