Turkish coffee or oriental coffee - coffee made from finely ground coffee beans, sometimes with added sugar. Turkish coffee is just a recipe, not a separate variety of coffee or coffee beans. However, it is very popular all over the world, but it is most widespread in the Middle East, Caucasus, North Africa, the Balkans and other territories that were previously part of the Ottoman Empire.

Initially, the drink was brewed by the Turks around the fire in a small Turk, tapering to the top and sharply expanding to the bottom, made preferably of copper. The temperature was regulated by the movement of the Turks, or as it is also called cezves, to the fire and moved away from it along the hot sand. Today, special devices for brewing Turkish coffee are sold - boxes with heating elements filled with sand. But the quality and taste of the drink prepared in this way are not felt by many. Differences in the taste of coffee brewed on sand, a gas stove or an alcohol lamp are almost imperceptible. Therefore, today we will make Turkish coffee in a Turk on a gas stove.

5. Bring the coffee to a low boil over the lowest heat. This will preserve the taste and aroma of the drink, and the coffee itself will have a high concentration of caffeine. Pour hot Turkish coffee into small cups after the grounds have settled to the bottom. Add cognac or whipped egg yolks with sugar to the drink, if desired. Usually in Turkey, a glass of cold water and Turkish delight are served with it. In some Turkish regions, crushed pistachios are added to the finished drink.
