For this, chicken fillet, dietary rabbit or turkey meat are suitable. Such soups, with all their variety, turn out to be hearty and tasty. In the absence of meat broth, you can cook soup with vegetable broth. But if you have a small amount of minced meat, you can also make a hearty first course. Make meatballs out of it for a richer, more nutritious soup. Meatballs are small balls of meat made of any kind of meat. Usually, they use leftovers or scraps of meat that are not suitable for any dish. It can even be assorted.
Vegetables are always a healthy diet. You can choose them for a dish based on personal taste preferences. How to prepare a carbohydrate-free vegetable soup with meatballs step by step:
1. Prepare all vegetables. Wash and cut into cubes. The ones that need to be peeled are onions and carrots, peel first. Remove the bitterness from the eggplant. To do this, sprinkle the chopped vegetable with salt and leave for half an hour. When droplets appear, rinse them under running water. Choose young zucchini, if the vegetable is ripe, then peel it from the hard peel and remove the soft seeds. Remove the seeds and partitions from the bell pepper. Choose dense tomatoes so that they retain their shape during cooking. The soft fruits will boil up and turn into a puree.
