Cottage cheese is a traditional delicacy made from cottage cheese with the addition of semolina. However, there is an opinion that flour is not added to real cottage cheese makers. But it cannot be denied that recipes for cottage cheese with flour have a right to exist. Most often, curds are fried in a pan in vegetable oil, but there are recipes for baking them on a baking sheet in the oven.
Today I will tell you how to cook cottage cheese without flour with the addition of semolina. This dish is perfect for nursing mothers and those who are looking after their figure. After all, nutritionists and doctors say that white flour does not have nutritional value, but is an easily digestible carbohydrate that raises blood sugar.
For a variety of dishes, add all kinds of fillers, such as raisins, dried apricots, apples, pears, carrots, lemon zest, etc. If the fruit is watery, it is recommended to sprinkle it with flour mute, and then add it to the curd mass. It is important to remember here that there should not be many additives - for 400 g of cottage cheese, one handful of berries, pieces of fruit, nuts or herbs is enough.

- Eggs - 1 pc.
- Semolina - 2 tablespoons
- Plums - 4 pcs.
- Peanuts - 50 g
- Salt is a whisper
- Sugar - 2 tablespoons or to taste
- Refined vegetable oil - for frying
Cooking curds with fruit
1. Place the curd in a bowl for kneading the dough. If possible, rub it through a sieve or beat with a blender. Sprinkle in the semolina and beat in the egg.
If your curd is too watery, then put it in a sieve so that all the whey is glass. Otherwise, you will have to add more semolina, from which the curds will turn into manna.
2. Put in salt and sugar. Mix the products well until smooth and leave for 20-30 minutes to swell the semolina. If desired, sugar can be replaced with honey or jam.
3. Meanwhile, peel the peanuts and grind them with a hammer to make pieces of different sizes. You can use walnuts or other nuts instead of peanuts.
4. Wash the plums, dry with a paper towel, remove the pit, and cut the pulp into small pieces. Then add peanuts with plums to the curd dough and mix everything well. If you do not like plums, then add any other seasonal berries. In addition, frozen fruits can be used.
5. Place the frying pan on the stove, pour in refined vegetable oil and heat well. After with wet hands, take a portion of the dough, form a ball out of it, which you lightly press down to make a cake (like in my photo above). Place the curds in a skillet and fry them on both sides until golden brown, about 5-7 minutes each.
Serve ready-made curds with sour cream, honey or jam.
