The batter envelops the product, without disturbing the taste, and forms a crispy crust, which can be removed from the finished product by losing weight.
Prepare the batter by mixing the products to a creamy consistency. It can be thicker or less frequent, depending on the application. The batter can contain milk, eggs, broth, juice, beer, wine, sour cream, kefir, cream, flour, semolina, starch, ground crackers, crushed nuts … depending on the application. It can also be sweet with added sugar, vanilla, cocoa powder, coconut flakes … or salty with spices, herbs and spices. Often, to add a certain taste, the batter is prepared with yeast. Today we will prepare a classic version - egg batter with flour.

- Flour - 100 g
- Vegetable oil - 1 tablespoon
- Eggs - 2 pcs.

Step by step cooking egg batter with flour, recipe with photo:
1. Wash the eggs, break the shells and pour the contents into a deep container.
2. Add flour to the eggs, sift through a fine sieve to enrich it with oxygen. So the batter will be more airy and magnificent. Add salt or sugar to the food, depending on the use of the batter.
3. Beat the food with a whisk or mixer until smooth, so that there are no lumps. Pour in vegetable oil and stir again. Oil does not need to be added to the batter if the food will be deep-fried. But if you fry them in a frying pan, then it will be possible to pour less vegetable oil into the pan, because it is already present in the egg batter with flour.
Soak the finished batter in the refrigerator for about an hour to make the batter more homogeneous and elastic. Since the contrast of temperatures is important: cold batter and well-heated oil / deep fat.
The proposed recipe for liquid breading is basic. It can be adjusted depending on the application. Chops in batter are considered the most common dish. Also in this batter you can fry cheese, fish, chopped meat, cutlets, mushrooms, squid rings, shrimps, rice croquettes, eggplants, zucchini, pumpkin, bell peppers, tomato rings, pears, plums, bananas, chocolates … Remember, that hard vegetables must be boiled in advance until half cooked.
