Brizol is a French version of omelet with various fillings. This is a hearty, very simple yet exquisite dish. Of course, you can't cook it for a festive meal, but it's very worthy for an everyday menu. This dish is especially suitable for breakfast for the whole family. The basis of the dish is an egg "pancake" fried in a pan, where one side is greased with minced meat without onions. The finished dish is rolled up or folded in half. However, fillings can be absolutely anything.
Used as filling: vegetables, mushrooms, meat, cheese, herbs and even fruits for a sweet version of the dish. Therefore, cook your meal with your favorite foods, any of them will turn out delicious. But brizol with milk with cheese and cilantro turns out to be especially tender. A dish can be prepared in several ways. Some take turns to fry the egg and minced meat, and then roll the food into a roll. Others put the filling on a lightly fried omelette pancake and then bake it all together in the oven or on the stove with a lid. I suggest frying everything together right away.

Ingredients:
- Eggs - 2 pcs.
- Cilantro - a few twigs
- Salt - pinch or to taste
- Vegetable oil - for frying
- Milk - 25 ml
- Cheese - 50 g
Step by step cooking brizol in milk with cheese and cilantro, recipe with photo:
1. Pour the contents of two eggs into a deep bowl and season with a pinch of salt.
2. Pour milk into the eggs. Instead of milk, you can use sour cream or plain water. Whey or sour milk will also work.
3. Whisk the eggs and milk until smooth. You do not need to whip the food with a mixer. It is enough just to mix everything with a whisk.
Grate the cheese on a medium or coarse grater.
Wash cilantro leaves under running water, dry with a paper towel and cut into medium pieces.
4. Pour vegetable oil into a frying pan and heat well. Heat the stove to medium heat and pour the egg and milk mass into a preheated pan.
5. As soon as the edges of the omelet have set, but the egg pancake is still runny, place half of the cheese shavings on one side of the dish.
6. Place the chopped greens on top of the cheese.
7. Spread the remaining cheese on top of the cilantro. During baking, the cheese will melt and join the two egg halves together.
8. Gently lift the free edge of the omelet so as not to tear and cover the filling. Simmer the heat until low and bake the brizol in milk, cheese and cilantro on the stove, covered, for 3-4 minutes. It is necessary for the cheese to melt and the egg mass to completely coagulate. Serve the finished dish to the table immediately after cooking, since it is not customary to cook it for future use.
