I am sharing a simple salad recipe from the "for every day" series. The combination of beets with nuts or raisins is known to many. Today, this is how the salad with spicy beets and fresh crispy Peking cabbage, seasoned with aromatic olive oil, was born. But if you wish, you can add apple cider vinegar or lemon juice to the salad dressing.
This appetizer is especially relevant in the autumn-winter period, when the body needs vitamins and microelements. Although such a light salad can be made in the summer as well. It is fresh, light, healthy, and it is not difficult to prepare. It is also good that any products can be added to the composition: pickles, apples, raisins, etc. And use sesame or flax seeds for decoration. Step-by-step preparation of salad with beets and Chinese cabbage, recipe with photo:
1. Pre-boil the beets in water on the stove or bake them in foil in the oven until tender. Then cool well, peel and grate on a coarse grater. I recommend boiling the beets in advance, for example, in the evening. Then the cooking process will take 15 minutes.
2. Remove the required amount of leaves from the head of white cabbage, wash them, dry them with a paper towel and chop them into thin strips. Do not wash the entire head of cabbage if you will not use it. Because in a day it will wither, and the leaves will lose their crispness. Cut all the leaves, especially the dense white part, which is located at the stump. Since it is in it that all healing substances are concentrated.
3. Fold the cabbage and beets into a deep salad bowl.
4. Season salad with a pinch of salt and olive oil. Use other favorite sauces for dressing as desired.
