Depending on the time of year, there are seasonal vegetables on sale that can be mashed. Most vegetables are suitable for cooking. These are potatoes, beans, carrots, mushrooms, spinach, zucchini, pumpkin, eggplant, lentils, cabbage, beets, peas, etc. One of the options for vegetable purees is mashed potatoes with beets, carrots and onions. Such a composition of products brings only benefits to the body and has a good effect on the digestive tract, improving its work. Therefore, those who suffer from gastrointestinal diseases, vegetable purees will be especially useful, much more than eating vegetables in their usual form.
In addition, many vitamins are much better absorbed in boiled form. So, in carrots, beta-carotene is only boiled and contains 3 times more antioxidants and lutein. During the cooking of vegetables, part of the vitamins is, of course, lost, but the remaining ones are absorbed much better than raw. If this factor scares you, then without losing vitamins, you can easily solve this problem - steam vegetables in a double boiler. This will be the best way to prepare food. Or you can bake the ingredients directly in the peel in the oven.

Ingredients:
- Beets - 3 pcs.
- Carrots - 1 pc.
- Onion - 1 pc.
- Vegetable oil - for frying
- Salt - 1 tsp or to taste
- Ground black pepper - pinch or to taste
- Any greens to taste - a few twigs
- Ground sweet paprika - 1 tsp
- Any spices and herbs to taste
Cooking vegetable puree
1. Peel the carrots and grate them on a coarse grater. Peel the onion and chop it into half rings. Heat a frying pan with vegetable oil and put vegetables to fry.
2. Saute food over medium heat until transparent and soft. If for health reasons fried food cannot be eaten or mashed potatoes are prepared for the children's table, then boil the vegetables, bake in the oven or cook in a double boiler.
3. Boil the beets for 2 hours until soft. Although the specific cooking time depends on the size of the root vegetables.
4. After that, cool the beets a little so as not to burn, and grate on a coarse grater.
5. Add the beetroot mixture to the pan with fried onions and carrots.
6. Next, add finely chopped greens. It can be used both fresh and frozen. Add salt, ground pepper, all spices and herbs there.
7. Stir food, bring to a boil, cover and simmer for about 15 minutes.
8. Transfer the vegetable mass to a deep bowl and beat with a blender until smooth. If there is no blender, then twist the products in a meat grinder with a fine grid or grind through a sieve.
Eat pureed vegetables, both warm and chilled. In addition, it can be used for filling in any pies, pies, dumplings, etc.
