Amber peach jam with transparent slices will make a splash in winter. A jar of such a jam is suitable both for tea drinking in a bite, and for fragrant pastries. In appearance and color, peach jam resembles quince or apricot jam, but in order to cook jam with a pleasant consistency and structure, you need to adhere to several rules:
- You need to choose the right fruits - they should be firm, but not green. If you take overripe, the slices will not work, because the slices will boil. Leave these fruits for the jam.
- Be sure to add citric acid or lemon juice to the jam. This is necessary for the syrup to remain clear.
- Caloric content per 100 g - 258 kcal.
- Servings - 1 can of 0.5 liters
- Cooking time - 12 hours

Ingredients:
- Peaches - 1 kg
- Sugar - 1 kg
- Lemon juice - 50 ml
A simple recipe for making peach jam in slices for the winter

My peaches, remove the stalks. We take a sharp knife and make two circular cross-to-cross cuts along the fruit. We take the fruit with both hands and scroll it.

Sprinkle the peaches with sugar. Stir so that all the slices are in sugar.

We leave the peaches for 4 hours so that they let the juice flow. If the peaches are not juicy, then leave them overnight. My peaches gave a lot of juice.

Now we are preparing the jam. Bring it to a boil, reduce heat and cook for 5 minutes, skimming off the foam. We set aside the jam until it cools completely. During this time, the slices are saturated with syrup and will be elastic.

And now the most interesting thing - we get the peaches from the syrup. Now we will only cook the syrup. Add lemon juice to it and cook for 20-25 minutes over medium heat after boiling. It is easy to check readiness - put a drop of syrup on a plate, if it does not spread, the syrup is ready.

Add the wedges back to the syrup and cook for 5 minutes. We pour immediately into clean and dry cans. Close with sterile lids.

Leave a little jam to taste, because it is very tasty!
