What kind of peaches to take for jam? Of course, ripe and even overripe. The main thing is that they are not spoiled. The color of the finished jam depends on the type of peach. I took peaches with red skin, so the color is rather dark - amber. But if you take yellow peaches, the color will be yellow or light orange. These jams taste the same, although maybe if you try two types at once, you will feel some difference.

A simple recipe for making peach jam for the winter
Wash the peaches with a brush. As you can see in the photo on the left - the washed fruits are smooth, and on the right - a peach with fluff.
We sort out the washed peaches, cut off the spoiled places. Cut the fruit into random pieces. By the way, if you don't know how to remove a peach pit easily and quickly, use our advice. Make a circular cut in the fruit. Take it with both hands and twist it. You will hear a characteristic crackling sound and the peach will split in two. The bone from the second lobule can be easily pulled out by prying it with a knife.
Add sugar to the sliced fruit.
We leave them for 2 hours. During this time, they must give juice.
We put the pot of peaches on the fire. Bring to a boil and cook for 5 minutes.
Puree the contents of the pot. We put it back on a quiet fire and cook for 40 minutes over low heat, stirring occasionally so that the jam does not burn. When boiling, the jam becomes thicker, so if after the indicated time it is still liquid, boil it for another 10-15 minutes.
We will prepare the jars - they need to be sterilized and dried. If water remains inside, it can cause mold on the surface. Pour the jam into jars and roll up the lids.
Peach jam is good to eat in winter, spread on bread and butter and washed down with tea.
It can also be used to make sweet sauces or pour over pancakes, pancakes and pancakes.
